Abstract
The challenge of this century isn't about ensuring there's enough food for everyone, but about producing and distributing it in a way that's both environmentally and socially sustainable. The solution isn't for everyone to become vegan, but rather to adopt a more balanced diet that includes fewer animal proteins and more plant-based proteins. The reason it's so difficult to accept this reality lies in our habits, biases, and the vast interests at play. The meat and dairy industries, which generate billions worldwide, will fiercely defend their business. However, the shift from a diet dominated by animal proteins to one that favors plant-based proteins is inevitable, and it will have enormous implications.
